A fruit flavoured loaf made with home made butter and Khapli wholewheat (Emmer wheat) atta is not just a great snack which is healthy and adds energy to the day, it is also a delicious breakfast option when one is looking for a change from a spicy Indian morning meal.
Bananas are aplenty everywhere in India. With the banana trees fruiting in abundance, the fruits ripen faster than can be eaten in one go. Recipes like this banana bread are wonderful for using overripe bananas which add a natural sweetness and pair beautifully with spices like cinnamon, the richness of natural jaggery and farm fresh Makkhan.

RECIPE - JAGGERY BANANA BREAD
- Khapli wholewheat (Emmer) flour - 2 C
- Walnuts - ¼ C chopped
- Jaggery - 3/4C
- Ripe Bananas - 1 ½ C mashed well
- Apple cider vinegar or any natural vinegar of choice - 3/4tsp
- Salt - 1-2 pinches
- Thick Buttermilk - ½ C
- Makkhan (Butter) (soft) - 1/2C
- Cinnamon powder - 1 tsp
Sift the flour and salt into a bowl and set aside.
Grease a medium size loaf tin and line with baking paper.
Take another mixing bowl add the jaggery and butter and beat well with an electric whisk until smooth.
Add the buttermilk and cinnamon powder and beat again till frothy.
Add the bananas and beat for a few seconds until well mixed.Add the apple cider vinegar and mix.
Add the sifted atta and gently fold in using a turning action (do not beat) Mix until all the flour is moistened. Spoon it into the prepared tin.
Scatter the top with the walnut pieces.
Sprinkle a little jaggery on the top.
Bake in a 180 degree oven on the lower shelf until risen and golden.
Insert a bamboo skewer in the centre to check if it is baked.The skewer should come away clean without any stickiness.
Remove and let it cool properly on a wire rack.
Slice only after it is cool.
