Note: Usually 1 cup of rice can serve 2 people. You can adjust the rice quantity depending on the number of people you are serving.

  • 1 tsp A2 cow ghee 
  • 1 tsp cumin/'Jeera'
  • ½ cup rice
  • 1 cup water
  • ¼ tsp salt
  • 1 tej patta (Indian bay leaf)
  • 2 green cardamoms
  • 1 black cardamom
  • ½ inch cinnamon
  • ½ tsp of green chilli (optional)
  • 2 cloves
  • 1 to 2 single strands of mace
  • 2 tbsp coriander, finely chopped

Cooking Process

The rice-to-water ratio always depends on the quality of the rice you use. Usually, organic rice requires more water to cook than regular rice.

While you can estimate the ratio visually, the recommended 'Jeera' rice water ratio is 1:2, indicating that for each cup of rice, you need two cups of water.

Cook the Rice

Step 1: Rinse 1 cup of rice under cool water till the water runs clear of starch. (Rinsing removes some starch from the grains, which prevents them from sticking after cooking.)

Step 2: Soak the rice for 20-30 minutes. You can also soak it overnight if you have time.

Step 3: Drain all of the water and set the soaked rice apart.

Step 4: Heat 4 cups of water and bring it to a boil.

Step 5: Add the subsequent spices to it: bay leaf, green cardamoms, black cardamom, ½ inch cinnamon, 2 cloves, and 1 to 2 strands of mace.

Step 6: Add the soaked rice and 1 teaspoon of salt.

Step 7: Simmer the rice. (Taste the water to see if it tastes salty; it should)

Step 8: Cook the rice grains till they are tender. They must separate.

Step 9: Use a colander or a strainer to drain the water.

Step 10: Keep the cooked rice aside until it is completely dry and cool

Pro Tip: If you want, you can also wash the cooked rice. Before we add the tempering mixture to the rice, the rice has to be at room temperature.

Cook the Temper

Follow the below steps to prepare temper.

  • Heat 2 tablespoons of ghee in a ‘tava’ or pan. Put it on medium-low or medium heat.
  • Add 2 teaspoons of cumin seeds when the ghee is slightly hot. (This will help you to get proper browning and crackling of the spices.)
  • As soon as you add the spices, they will crackle and release their essential oils.
  • Let the cumin seeds crackle, as they need to be well-fried.
  • Add ½ teaspoon of chopped green chilli. Do not fry them too much so that they turn brown. (You can omit this part if you do not like spicy food)

Add Temper to Rice

Warning: Mixing the tempering mixture with hot rice may break the soft and tender rice grains as you stir. That is why we suggested cooling the rice before adding it to the temper. 

Next, we enter the last phase of the cooking process of this 'Jeera' rice recipe. 

  • Add the tempering to the rice.
  • You can use a fork or a wooden spatula to mix the temper with the rice grains. Do this gently so that you do not mash or break the rice grains.

Precaution: Do not use a spoon to stir, as it will break more grains than a fork. Also, keep any stirring to a minimum to prevent as much breakage as possible.

  • Add 1 tbsp of chopped coriander leaves and gently mix or garnish when you serve.
