How Coconut Sugar Is Made
It is made by making a cut into Coconut flower blossoms and collecting the dripping sap or ‘Neera’ and then reducing this sap until water evaporates to make sugar granules.

Have you ever been to the old Goa that still lives?
Riding through the black damber roads in the quaint villages of western ghats feels like a convoluted serpent overlooking a silhouette of lush green landscape. The gentle innocent breeze from the coconut and areca nut trees, picture-perfect paddy fields gleaming in the setting Sun and the slowness of the Susegad, laid-back and relaxed Goan life, is to absorb nice and slow.
As is the case of any seasonal, locally sustainable and timeless place, Goa makes amazing use of its rich biodiversity in its native food heritage. Fish, coconut, cashews and the spicy and tangy flavours of life come out oozing into the food folklore of Goa.
