Q. Why jaggery block is hard ?
A. Our sugarcane is of heirloom variety grown on our organic certified farm. We are against using any chemical fertilizers or pesticides and due to which our texture always differs from previous. The process includes slowly heating our sugar cane juice which then converts into molasses after removal of moisture, we use natural cleansing agent Okra (Lady finger), which is later poured into molds.
The hardness of jaggery is because we do not add any preservatives and we try natural processes. We prefer very slow heating and 100% removal of moisture to avoid fungus and molds occuring inside natural organic jaggery. This above process also ensures that the nutrient value of jaggery stays as it is.
Moving ahead towards the taste of jaggery, it totally depends on the sugarcane juice. We also inform our customer that you may see variance in colour, texture in different batches of jaggery as these are made from organically grown heirloom sugarcane and factors such as soil, weather and season can produce different sugarcane.
