  • Ragi flour: 1/2 cup
  • Wheat flour: 1/2 cup
  • Jaggery powder: 1/4 cup
  • Curd: 1/4 cup
  • Milk: 3/4 cup
  • Baking powder: 1 tsp
  • Baking soda: 1/2 tsp
  • Vanilla extract: 1/2 tsp
  • Salt, one pinch 

Cooking Instructions to Make Jaggery Millet Pancakes

  • Take a deep bowl and mix all the dry ingredients. 
  • Then, add curd, milk, and Jaggery to the dry mix and mix everything well.
  • To adjust the consistency, you can add more milk.
  • Now, for flavouring add vanilla extract, fennel seed, or cardamon.
  • Let the batter rest for 5 minutes.
  • Heat the tava and pour one scoop of the pancake batter on it. Cook both sides on low flame.
  • Once golden brown on both sides, take them off the tava and serve them.

Ingredients for Jaggery Malpua

  • Crushed Jaggery – half cup 
  • Whole Wheat Flour– 1 cup
  • Fennel Seeds – ½ tsp 
  • Green Cardamom or elaichi powder – ½ tsp
  • Fruit salt, a pinch
  • Ghee for deep frying or shallow frying (as required)

Cooking Instructions to Make Jaggery Malpua

  • Heat water in a pan and add crushed Jaggery to it. 
  • Stir on a medium flame till the Jaggery melts. Switch off the flame, and keep the Jaggery syrup aside to cool down.
  • Take another bowl and transfer the wheat flour to it. 
  • Now, gradually add Jaggery syrup to it, mix well to avoid any lumps, and make a thick, uniform batter.
  • Add cardamom powder to the batter and mix again.
  • Now, heat some ghee in a shallow fry pan. 
  • Pour a scoop of Malpua batter into the pan and let it spread a little.
  • Let it cook on a medium flame until it's golden brown at the edges.  
  • Take it off the pan and serve it hot.

Malpua is traditionally deep-fried. But, shallow frying also gives similar results. Sprinkle some cardamom powder on the hot Malpua, and serve it with some Rabri.

  • Green cardamom powder – 1 tsp
  • Crushed coconut or powdered coconut – 1.5 cup
  • Jaggery crushed or powdered – ⅔ cup
  • Whole wheat flour – 2 cups
  • Salt – ½ tsp
  • Ghee – for toasting the parathas
  • ½ Milk and ½ water mixture as required to knead the dough 

Cooking Instructions to Make Jaggery And Coconut Stuffed Parathas

This recipe is very simple to make. Here’s what you need to do:

  • Take the whole wheat flour in a bowl and rub the ghee and salt into the flour.
  • Now, gradually add the milk-water mixture to it and knead a soft dough.
  • Now, heat another bowl and add Jaggery and coconut powder, or crushed coconut, and mix them well. Don’t melt them completely; just warm them to mix well. Add a generous amount of cardamom powder and mix again.
  • Now, take a small portion of dough and fill it with the Jaggery-coconut stuffing.
  • Roll out the parathas gently.
  • Then, roast both sides of them on the tava with some ghee.
  • Serve them hot and enjoy.

Another version of the coconut-Jaggery recipe is from Kerala, where whole wheat is replaced by rice flour. The Jaggery and coconut are stuffed in rice flour paratha, wrapped in banana leaves, and steamed.

Here’s what you need to make Amla Jaggery Candy:  

  • Amla, 1 kg
  • Jaggery, crushed or granular, 400 to 800 grams
  • Black Salt (according to taste)
  • Black Pepper (according to taste)
  • Cumin powder – 3 to 4 tsp
  • Water – as required

Cooking Instructions For Amla Candy Jaggery Recipe

  • Cook the Amla for two whistles in a pressure cooker and release the pressure after it. Add chilled water to the boiled Amla to stop cooking.
  • Then, deseed the Amla, and cut them into small pieces.
  • Now, take a bowl and mix the Amla pieces with Jaggery.
  • Cover the bowl and leave it until the Amla releases juice and Jaggery is completely dissolved.
  • Then, stir the mixture well and leave it overnight.
  • The next morning, strain the Amla and spread it on a tray. Then, dry it under the sun or use the oven to dehydrate the Amla faster. 
  • Now, blend black salt, black pepper, cumin powder, and some Jaggery altogether.
  • Add the dried Amla to the spice mixture and give it a good mix. The Amla pieces should be coated well with the spice.
