  • Wheat flour: 1/2 cup
  • Jaggery powder: 1/4 cup
  • Curd: 1/4 cup
  • Milk: 3/4 cup
  • Baking powder: 1 tsp
  • Baking soda: 1/2 tsp
  • Vanilla extract: 1/2 tsp
  • Salt, one pinch 

Cooking Instructions to Make Jaggery Millet Pancakes

  • Take a deep bowl and mix all the dry ingredients. 
  • Then, add curd, milk, and Jaggery to the dry mix and mix everything well.
  • To adjust the consistency, you can add more milk.
  • Now, for flavouring add vanilla extract, fennel seed, or cardamon.
  • Let the batter rest for 5 minutes.
  • Heat the tava and pour one scoop of the pancake batter on it. Cook both sides on low flame.
  • Once golden brown on both sides, take them off the tava and serve them.

  • Crushed Jaggery – half cup 
  • Whole Wheat Flour– 1 cup
  • Fennel Seeds – ½ tsp 
  • Green Cardamom or elaichi powder – ½ tsp
  • Fruit salt, a pinch
  • Ghee for deep frying or shallow frying (as required)

Cooking Instructions to Make Jaggery Malpua

  • Heat water in a pan and add crushed Jaggery to it. 
  • Stir on a medium flame till the Jaggery melts. Switch off the flame, and keep the Jaggery syrup aside to cool down.
  • Take another bowl and transfer the wheat flour to it. 
  • Now, gradually add Jaggery syrup to it, mix well to avoid any lumps, and make a thick, uniform batter.
  • Add cardamom powder to the batter and mix again.
  • Now, heat some ghee in a shallow fry pan. 
  • Pour a scoop of Malpua batter into the pan and let it spread a little.
  • Let it cook on a medium flame until it's golden brown at the edges.  
  • Take it off the pan and serve it hot.

Malpua is traditionally deep-fried. But, shallow frying also gives similar results. Sprinkle some cardamom powder on the hot Malpua, and serve it with some Rabri.

  • Take the whole wheat flour in a bowl and rub the ghee and salt into the flour.
  • Now, gradually add the milk-water mixture to it and knead a soft dough.
  • Now, heat another bowl and add Jaggery and coconut powder, or crushed coconut, and mix them well. Don’t melt them completely; just warm them to mix well. Add a generous amount of cardamom powder and mix again.
  • Now, take a small portion of dough and fill it with the Jaggery-coconut stuffing.
  • Roll out the parathas gently.
  • Then, roast both sides of them on the tava with some ghee.
  • Serve them hot and enjoy.

  • Amla, 1 kg
  • Jaggery, crushed or granular, 400 to 800 grams
  • Black Salt (according to taste)
  • Black Pepper (according to taste)
  • Cumin powder – 3 to 4 tsp
  • Water – as required

Cooking Instructions For Amla Candy Jaggery Recipe

  • Cook the Amla for two whistles in a pressure cooker and release the pressure after it. Add chilled water to the boiled Amla to stop cooking.
  • Then, deseed the Amla, and cut them into small pieces.
  • Now, take a bowl and mix the Amla pieces with Jaggery.
  • Cover the bowl and leave it until the Amla releases juice and Jaggery is completely dissolved.
  • Then, stir the mixture well and leave it overnight.

  • Now, blend black salt, black pepper, cumin powder, and some Jaggery altogether.
