1 Mash the Potatoes
1. Peel and mash the boiled potatoes while they’re still warm so they absorb the flavours better.

2 Add the Aromatics
2. Mix in finely chopped onion and green chillies.

3 Season
3. Sprinkle TBOF Himalayan Pink Salt and gently combine everything.

4 Add the Mustard Oil
4. Drizzle a generous spoonful of TBOF Wood-Pressed Mustard Oil over the mix and stir again until evenly blended.

5 Garnish
5. Top with freshly chopped coriander leaves, if using.

6 Serve
6. Serve warm with rice and dal — or enjoy it on its own with a cup of black tea.
