Ingredients

For the Potato Filling
  • 3 medium-sized potatoes, boiled and mashed
  • 2 green chillies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon garam masala
  • Fresh coriander leaves, chopped
  • Salt to taste

Dough
  1. Pour the wheat flour and a pinch of salt into a huge bowl. 
  2. Add water and knead right into a gentle, pliable dough.
  3. Cover the dough with a moist cloth and let it rest for half an hour. 
Make the Potato Filling
  1. Mash the potatoes and place them in a separate bowl. 
  2.  Add green chillies, ginger-garlic paste, and cumin seeds.
  3. Add garam masala, chopped coriander leaves, and salt.
  4. Blend the vegetable mix and spices.
  5. Mix the filling well before you move on to making the paratha.
Make the Paratha
  1.  Divide the dough into small balls and roll them into a small disc.

Ingredients

  • 2 cups Khapli Wheat Flour (Emmer Wheat Flour)
  • ¼ tsp turmeric/haldi
  • ½ tsp red chilli powder 
  • ½ tsp chaat masala
  • ¼ tsp garam masala
  • 2 tsp oil or ghee
  • ½ tsp salt
  • 1 tsp ginger paste
  • ¼ tsp pepper, crushed
  • 1 tsp cumin/jeera
  • ¼ tsp coriander powder
  • ½ cup pudina/mint, finely chopped
  • Water to knead the dough

Preparation 

Pudina Puree 
  • Wash and strain some pudina leaves in a bowl.
  • Roughly chop them to make blending easier.
  • You need 2 cups of the pudina puree.
Dough Prep
  1. Knead a soft dough using warm water.
  2. Divide the dough into 6 equal portions.
  3. Roll one portion into a circle using whole wheat flour and even a little oil.
  4. Fold the two opposite corners of the paratha towards the centre; do not overlap them.
  5. Fold the other two opposite corners to make a square envelope.
  6. Heat a non-stick pan and add some oil.  Place the paratha once the oil is hot.(Do not smoke it).
  7. Cook the paratha on both sides until golden brown. Enjoy the crisp sound and taste of this paratha with every bite that you take!
